Vinification

Harvest by hand, pressed in pneumatic press, fermentation at 20 °C in steel tanks (Malvasia) and barriques used for the 3rd or 4th time (Carricante), bâttonage and aging sur lie for about 6 months. Natural clarification through frequent racking.
